DISTILLO EXPO 2024 : four days of «craft» technology
Distillo is the first exhibition held in Italy dedicated to equipment for micro-distilleries and highlighting the balance between craftsmanship and new technologies.
For the 2024 edition, the event will take place during SIMEI, at the Fiera Milano. The world leader in wine technology, SIMEI has been making a name for itself on the international scene in recent years as a specialised event dedicated to machinery and products for winemaking and drinks. SIMEI is a cross-over of beverage production areas – linked by the convergence of interest in the same technological sectors – which has significantly increased the event’s appeal worldwide from diversified targets of operators.

Gestione della fermentazione per la produzione di distillati
La fermentazione è una tappa fondamentale per la produzione di distillati e dipende dalla biologia del lievito per trasformare la fonte di zucchero in etanolo e nelle molecole che contribuiscono al profilo organolettico dei prodotti finali. La gestione della fermentazione è quindi essenziale per ottenere prodotti di qualità e per il controllo dei costi di produzione. Elena presenterà strategie e buone pratiche di monitoraggio per garantire il successo del lievito durante la fermentazione e mostrando esempi di risoluzione di problemi in diverse distillerie.
Fermentation management for the production of distillates
The fermentation is a key for the production of distilled spirits, which relies on the yeast biology to transform the sugar source into ethanol and congeners. In this talk, Elena will break down how and why fermentation management is key for final product quality and to control production costs. Tailor processes and good tracking practices to support yeast success in fermentation will be presented and their efficiency showcased with case study examples.
