Description
DistilaMax CN is a natural strain of Saccharomyces cerevisiae originally isolated by the Universidade Federal de Minas Gerais in Brazil.
Selected for its strong performance on fresh sugarcane juice and cane molasses, this yeast is particularly well suited for the production of aromatic, complex rums and traditional rhum agricole.
In fermentation, DistilaMax CN is known for generating a rich and well‑balanced aromatic profile. It promotes the formation of key esters as well as phenyl‑2‑ethanol, contributing to floral, fruity, and refined sensory notes that are highly sought after in premium rum styles.
The strain also demonstrates excellent robustness in challenging operating conditions. It tolerates significant osmotic stress and maintains reliable fermentation kinetics even at elevated temperatures up to 40 °C, while performing efficiently across a broad pH range (3.4–5.3). This resilience allows distillers to maintain process flexibility without compromising aromatic quality.
