Lallemand Distilling is pleased to announce its active participation in the World Distillers Spirits Conference (WDSC) 2026. Recognised as a leading international platform for distilling science and innovation, WDSC brings together producers, researchers and industry experts from across the global spirits sector.

This year, Lallemand Distilling is proud to sponsor both the WDSC Networking Event and the Sensory Sessions, reinforcing our commitment to knowledge sharing, collaboration and innovation within the distilling community. The Networking Event will take place on Tuesday 5 May at Brewhemia (7:30–11:00 pm), providing an informal opportunity to connect with peers and industry leaders.

Lallemand Distilling presentations and sessions

Throughout the conference, several members of the Lallemand Distilling team will contribute to the scientific and technical programme through poster presentations, oral sessions and sensory workshops:

  • Karen Buzon, Research Scientist, will present work on the revival of historic distillers’ yeast strains for flavour development in Canadian whisky (Poster Session, Tuesday 5 May).
  • Jesus Roberto Villalobos Arellano, Research Associate, will share insights into the development of a high‑performance yeast strain for Scotch whisky fermentation (Conference Session, Wednesday 6 May).
  • Shernell Layne, Technical Sales Manager, together with Jason Zeno, Director of Operations at Porchjam Distillation (USA), will lead sensory sessions exploring how biotechnology can be leveraged to create high‑ester rum (Wednesday 6 May).
  • Bailey Carignan, Research Scientist, will present on next‑generation distilling yeasts designed for flavour, yield and process robustness (Poster Session, Thursday 7 May).
  • Elena Fossati, Research Director, will discuss efficient fermentation of whey permeate for distilled spirit applications (Poster Session, Thursday 7 May).
  • Joe Vettese, Technical Sales Manager, will present on the implementation of stabilised liquid yeast to enhance fermentation efficiency and sustainability in malt whisky production (Poster Session, Thursday 7 May).

In addition to our technical contributions, the Lallemand Distilling team will be present throughout the event at Stand No. 24.
