DistilaMax™ LS has a short lag phase and a fast fermentation rate in a wide pH range (3.25 – 5.3). The strain displays a good temperature tolerance (18°C – 32°C), which makes it a reference for the production of fruit brandies.
Besides, DistilaMax LS is fructophilic, and highly recommended in the production of spirits made from fructose-based substrates.
