Fermentation management for the production of distillates The fermentation is a key for the production of distilled spirits, which relies on the yeast biology to transform the sugar source into ethanol and congeners. In this talk, Elena will break down how and why fermentation management is key for final product quality and to control production costs. Tailor processes and good tracking practices to support yeast success in fermentation will be presented and their efficiency showcased with case study examples. The congress of Argentine distillers is the first and only event in the country and throughout Latin America that brings together in one place the wide world of craft and industrial distillates. This initiative arose in 2021 from the need to share ideas, news and best practices among distillers friends of Fratelli Faccin stills and La Chapita MDP. With the precedent of the previous year, the proposal was scaled and the growth was exponential. The event welcomes attendees from the country and neighbouring countries such as Uruguay, Chile, Bolivia, Mexico and Ecuador.
