Description
DistilaMax RM was selected by INRA (France) in partnership with Lallemand. Isolated from a tropical environment, this robust yeast strain offers excellent tolerance to elevated fermentation temperatures.
Specifically chosen for the production of Agricultural Rum (Rhum Agricole), DistilaMax RM is ideally suited for cane juice–based fermentations.
It delivers a clean and reliable fermentation profile, producing spirits with an excellent congener balance, enhanced aromatic complexity, and high-quality performance throughout the fermentation process.
